When Lisa Hess’ friend suggested she open a coffee shop, she laughed at the idea. Little did she know she would sign a lease not much later after seeing a sign in a vacant shop space.
Lucy’s Coffee Co. is named after owner Hess’ 10-year-old daughter and will open in Laurel Lane Shopping Center at the end of April or beginning of May, after six months of renovation.
“We are literally just waiting for the gas to come on and the inspection [to pass],” Hess said.
After operating out of a mobile food truck for three years, a permanent location was the next step, Hess said.
“What I’m creating with Lucy’s is a place that a local family can go to with a comfortable vibe, delicious coffee, drinks and light food,” she said.
The retro coffee shop will focus on using local ingredients, such as organic milk, and homemade house syrups, like peanut butter and honey lavender.
Cal Poly students like biology freshman Lily Shindle said they’re excited that this coffee shop will add more variety to the coffee shop community in San Luis Obispo.
“This is another place [for students] to say, ‘Oh they have that retro coffee shop, that’s sick,'” Shindle said.
Lucy’s Coffee Co. will also offer lighter meals and snacks, like avocado toast.
Other items customers can expect on the menu are gluten-free baked goods from Bless Your Heart Bakery in Paso Robles, a dark roast from Coastal Peaks Coffee and a light roast from Spearhead in Paso Robles.
“We’re in between a coffee shop with all the sweets and the full blown cafe coffee shop,” Hess said.
Lucy’s Coffee Co. is located at 1279 Laurel Lane.
